One of the 'County Cheddars' named after the counties of England, Leicestershire Red, or Red Leicester, is an aged, buttered-clothbound cheese similar to a cheddar but much more moist and with a milder flavor. The cheese pairs with grapes and pears and is suited to a full-bodied white wine such as Muscadet, Sancerre, Chenin Blanc and Vouvray.
