This traditional alpine style cheese is made from unpasteurized cow's milk. Its flavors are nutty, grassy, and mushroomy. It has a pungently earthy smell but the flavor is definitely more mild. This cheese is matured between 2 and 4 months and is named after the Savoie region of France where this cheese is made.
